Tagine – the Moroccan equivalent of ‘stew’. Cooked in a clay pot, over a wood fire, the tagine will be different in flavour from a stew cooked in a saucepan on a gas stove, even when the ingredients are the same. The combination of the wood fire and the clay pot give the tagine its own unique flavour – delicious!
