Access to the desert regions of Morocco is via the international airports of Oujda (north-east Morocco), Ouarzazate (southern Morocco), and Agadir (south-west Morocco). There are also several regional airports (many of them reached via Casablanca), such as Bouarfa (east), Er-Rachidia (central-south), Tan-tan (south), Laayoune (south), Smara (south) or Dakhla (far south).

TERFEZIA: MOROCCAN DESERT TRUFFLES | |
![]() | Hidden in the sand, these TRUFFLES must be cooked before you eat it. On no account should you should confuse sand TRUFFLES (Terfezia) with the French "Tirmania" TRUFFLES. Terfezia is plentiful and is used as a vegetable in cooking. French Tubers are relatively rare, and so full of flavour that we can consider them as a condiment with which to flavour sauces. Terfezia is plentiful in sandy areas, where the climate is dry and semi-arid. The taste is rather special: like something between an artichoke and a mushroom. There are no recipes for preparing terfezia: it is the Southern people who cook them best. In the North, terfezia is prepared like Tagine, in earthenware pots. After the meat has been cooked, the potatoes are added, together with spices (salt, pepper and ginger), and oil. The terfezia is washed, peeled and chopped, then added to the ingredients in the pot; then after some further cooking, it is served hot.
